i just had the best vegan quesadilla. first i made this queso. the queso recipe calls for "rotel or other diced tomato and green chili mixture". we don't have that here on oz (i didn't look very hard but mexican type foods are pretty limited here). i ended up just blending up some tomato with a few pieces of pickled jalapeno pepper slices-- worked really nicely. then i spread some refried beans and a layer of queso on top of a tortilla. i placed another tortilla on top and put it in a hot fry pan (flipping once to brown both sides nicely and warm the inside up). i topped it with some homemade guacamole from the worst looking avocado (it was still hard and green when i cut it open and it stuck to the stone but tasted really nice once it was blended up with some garlic, lemon juice and a bit of dried chilli).
